Gas heating
A common method in which the pan is heated directly from the flame of a gas burner. Modern control and monitoring systems make this method quite safe, and the low cost of gas, compared to electricity, reduces costs. When connecting a frying pan powered by main gas, it is usually necessary to involve gas service professionals.
Another way is to heat the pan with hot oil or steam. For this, the unit is equipped with a thermal station from which heated oil (steam) enters the pan. Normit pans use oil as a heat carrier. Heating is done in the built-in heating station directly in the bottom of the pan. This method simplifies the design, does not require the use of complex and expensive hot oil transfer pumps. In addition, the large volume of oil in the bottom tank of the pan protects against "subsidence" of temperature at the time of loading of the cold product. To regulate the volume of oil during heating, a compensatory expansion tank is used. Heating with thermal oil allows you to heat the product to a temperature of 260°C. A further increase in temperature will cause the burning of oil and the loss of its properties.
Electric heating
Electric heating is a method of directly heating the walls (cylinder model only) and bottom of a pan from electric heaters (heating elements).
The Normit frying pans with direct electric heating are made in the form of a multilayer structure. AISI 304 stainless steel surface (or AISI 316 optional) is in direct contact with the product. Next comes a thick layer of aluminum, which serves to strengthen the structure and quickly transfer heat from the heating elements to the first layer. Heaters are mounted directly on aluminum. Heaters are pressed by another layer of aluminum, which enables their fixation and safety.
Despite a certain complexity, this heating method has one important advantage - the ability to raise the frying temperature to 300 ° C.
To increase the accuracy of regulating the heating temperature, temperature sensors are built directly into the thick aluminum layer between the heating element and the stainless steel layer. This allows automation to quickly respond to temperature changes even before its excess has affected the product itself.
Depending on the shape of the working part, the pans can be cylindrical, in the form of a ellipse or in the classical form of a cone. The frying pans in the shape of a cylinder are more used for stewing, blanching, or even cooking, the cauldron shape is preferable for active frying, deep-frying, cooking rice, etc. Normit offers a wide choice.
Frying pan with specially designed agitator
The use of a stirrer when preparing a product in a frying pan significantly reduces the amount of manual labor, increases the safety of work on the unit. Uniform constant stirring allows you to get a product of consistent uniform quality, color and taste. Unlike other standard cookers, the Normit pan is equipped with a stirrer in all variants.
Agitators are designed for all shapes of a frying pan (cylinder, wok). The agitator have scrapers that cover the entire surface of the pan, without leaving dead zones. The mixer with Teflon scrapers works continuously, thus cleaning not only the bottom of the pan but also its walls, which allows you to cook the product without burning. For operation at very high frying temperatures, the kit may include scrapers made of special materials or steel.
In order to be able to steam the product, the pan can be equipped with a special basket that is installed instead of the mixer. In this case, the product is placed in the basket, and water is poured into the pan to create steam.
Unloading of the product
The multifunctional pan is equipped with the convenient product unloading system, with the complete tipping of the working vessel.
Hygiene
The construction of the device is fully made of stainless steel AISI304 or AISI316L. There are no dead zones and the entire surface of the pan is accessible for cleaning and maintenance.
