Sourdough fermentors NORMIT SOURDOUGH are used to produce and maintain liquid sourdough starter at an ideal consistency.


Its functioning is highly innovative. The machine is designed for the fermentation of yeast, ferment.
Process of fermentation by NORMIT SOURDOUGH means fully austenitic stainless steel of the highest quality, that, along with other elements, provides a long service life of the equipment.A submerged blade ensures uniform mixing. Automatic cleaning with this type of mixeris not required - machine is easily to clean


The machine is equipted with software /PLC control system (control software for the cycle of maturation and storage)

The control system provide display data for the time of fermentation the amount of liquid in the tank, temperature and a few other indications, necessary to control the fermentation process.


PROCESS (simply to use):


At the first step you add the flour and water into the machine and also SCRAPING before start cycle, then equipment components stir until smooth. The water is poured at a temperature of 40 ° C.
Under strict temperature water inlet, the machine provides a constant temperature.

Fermentation is provide at 30 °C degree for a period 12 hours (full fermentation cycle).


(Nevertheless, it can be made already after 3 hours). In the next step you can take right amount of leaven
in the bowl for mixing dough. The consumption rate is about  10% -30% depends on weight of the flour. Leaven can be used  for wheat breads and rye.


 Daily addition of water and flour is required to ensure continuous fermentation process, or scraping bacteria dies.


The maximum break - two days (if stored in the reservoir, at + 12 ° C).

To avoid losing a certain part of the scraping bacteria can be stored in a chamber or storage tank  at a certain
temperature conditions (+ 4 ° C for 21 days).
